- Beef is sold in quarters and halves, all on a live animal basis
- A steer will yield about 400 pounds of boneless retail cuts (about 100 pounds per quarter)
- Depending on cutting orders, this usually entails about 1/2 steaks and 1/2 ground
- Price is inclusive of processing, wrapping and shipping
- A quarter of beef will require about 5 cubic feet of freezer space

- Lamb is sold in halves and wholes, all on a live animal basis
- A lamb will yield about 50 pounds of boneless retail cuts (about 25 pounds per half)
- Depending on cutting orders, this usually entails about 1/2 chops and roasts, and 1/2 ground
- Price is inclusive of processing, wrapping and shipping
- A half of lamb will require about 2 cubic feet of freezer space
